American Frosting
American frosting comes in handy when you need something quick and easy to top off your baby shower dessert.
This recipe has been adapted from Essential Guide to Cake Decorating.
This icing is used for many traditional cakes, like carrot cake or sponge cake. It makes awesome peaks and creates a slight crust when cold. The best thing, is that it only takes 8-10 minutes to make!
This recipe makes enough to frost the top and sides of a 9 inch cake.
Ingredients
2/3 cup superfine sugar
1 tbsp water
1 tbsp corn syrup
1 large egg white
Mix all ingredients together in a large clean heatproof bowl. Place over a saucepan of simmering water. Whisk lightly until the sugar has dissolved.
Whisk hard for several minutes, until the mixture forms stiff peaks. Remove from the heat and continue whisking until the icing cools.
Spread generously over the top and sides of the cake.
Make peaks or attractive swirls, and leave until cold, by which time the icing will have acquired a slightly crisp surface.

We have used this recipe on cupcakes as well. It will cover about 12 (a dozen) cupcakes. If you're not a huge baker or don't have a bunch of time, try this one out. You'll be glad you did!
