Cream Cheese Frosting
Add some cream cheese frosting to your red velvet or any spice cupcakes and you're instantly the best baby shower hostess in town.
This recipe is short and sweet, literally. The cool thing is that there's so many yummy things you can do to your icing to kick it up a notch: add some liqueur, add some ginger, some vanilla bean scrapings, or some chai. Get creative.
Ingredients
* 4 ounces unsalted butter, softened
* 4 ounces CC, softened
* 2 cups powdered sugar
* 1 teaspoon vanilla extract
Directions
In a large bowl, beat together the butter and CC with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth. Beat in the vanilla extract.
Wow, that was so hard right? Not really. The hardest part for me is always remembering to take the butter and CC out of the refrigerator about an hour before I get started, so it'll be at room temperature for when I begin.
My mind doesn't work ahead that way most of the time, so I end up sticking in the microwave on defrost. Believe me, you don't get the same results. It's best to set your alarm clock, or do something to remind yourself to take your goodies out of the fridge on time.
One of the things I like about working with this icing is that because of its smooth texture, it looks great when you make swirls of it on top of cupcakes (think of a beehive shape). It's also soft enough to hold some sprinkles, should you sprinkle some on top of it.
