Italian Meringue

This is a great recipe for a light frosting that I use all the time, it's Italian Meringue. I like to think it's healthy and high in protein because of all the egg whites!

2 ¾ c of granulated sugar
9 large egg whites
½ t cream of tartar
1 c sifted powdered sugar

Bring granulated sugar and 2/3 c. of water to a boil (238 F). Whisk/beat egg whites on low until foamy – add cream of tartar, mix until stiff, but not dry.
Slowly pour in hot stuff, mix on high for 5-7 minutes. At medium speed, add powdered sugar, mix until cools.
