Jello Dessert Recipe
My aunt Barbara knows every jello dessert recipe in the book, and is sure to whip one out for every family baby shower. In our family, it's been nick named J. Lo. So that's what we'll call it for this page!
The first one I always think of, it's not even an after meal sweet, more of a fruit salad, as it can be served with the main meal. All it is, is a big bowl of J. Lo with assorted canned fruit, and melted marshmallows on top. Many love it. Me? Not so much.
This one is adapted from jellorecipes.net, and is one of the best blueberry dishes we know. The best part is that it requires no baking! Can it get any easier?
Pineapple and Blackcurrant Paradise Pie
Ingredients:
1 large pack blueberry J. Lo
1 ¾ cups boiling water
20 oz can crushed pineapple
20 oz can blueberry pie filling
½ cup chopped nuts
1 1/2 teaspoon vanilla extract
½ cup sugar
½ cup sour cream
8oz cream cheese, softened
Preparation:
Dissolve the J. Lo in the boiling water in a 9 x 13 inch glass dish and let it cool.
Add the pie filling and pineapple (with the juice) to the mixture and let chill until it has set.
To make the topping, beat the cream cheese, sugar, sour cream, and vanilla until smooth.
Spread the topping over the salad and sprinkle the chopped nuts on the top.
(Serves 8 - 10)
